En 2011, il est accueilli au Meurice par Yannick Alléno et Camille Lesecq. En 2012, Cédric Grolet a 26 ans lorsque Alain Ducasse arrive au Meurice À 26 ans, il accède alors au poste de chef pâtissier de ce palace parisien à la renommée mondiale. À partir de 2015, il se voit décerner tous les plus beaux titres et trophées de la profession, jusqu'à l'ultime consécration en 2018, lorsque le World's Fifty Best lui décerne le prix du meilleur pâtissier du monde. En 2018, il ouvre la Pâtisserie du Meurice et en 2019 sa boutique Opéra.
